This fresh summer garden salad is super simple, quick, and only requires about 6 easy ingredients. Enjoy this healthy salad on a hot summer day as a refreshing side dish, or top this salad with a protein of your choice and call it a meal. Either way, the flavors are SO worth it.



  • 1 long English cucumber, sliced
  • 2 cups cherry tomatoes, sliced
  • 1/2 small red onion, sliced
  • 1/4 cup fresh dill or herbs of choice, finely chopped
  • Juice of 1/2 lemon (about 2 tablespoons)
  • 1/4 cup extra virgin olive oil
  • Sea salt and black pepper to taste


  1. In a medium-sized bowl, combine the tomatoes, cucumber, onion slices, chopped herbs, lemon juice, olive oil, sea salt, and black pepper.
  2. Toss and coat the ingredients well with the dressing.
  3. Refrigerate for at least 20 minutes before serving. Enjoy!
