This summer, we found a watermelon patch in our yard, unintentionally! I was so excited because I love home grown food, and there were 6 giant watermelons ripening in late summer.
Until recently, I never would have ever tried mixing sweet and savory foods, it always sounded so gross to me, and what I did try at the time, was. But now that I develop recipes, I’ve been trying new things, and I’m so glad that I have!
This watermelon salad is so refreshing. It is full of water rich foods, vitamins, minerals, and fiber. This would be a great salad to consume when having a headache, because it’s so hydrating to the body.
To keep this salad pure, be sure to use as many organic ingredients as possible, especially the goat cheese. This is the olive oil that I use.
This salad pairs well with grilled salmon or chicken, and perfect for a summer barbecue.

- 2 1/2 cups watermelon 379 grams
- 1/2 cucumber
- 1/2 small red onion
- 1/2 cup fresh mint 8 grams
- 1 cup fresh basil 11 grams
- 3 tbsp goat cheese, crumbled
- 1 tbsp cold-pressed olive oil
- 1 lime, juiced
Ingredients

- Start by cutting the watermelon into cubes
- Cut the cucumber into quarters
- Slice the red onion
- Add all of the ingredients into a bowl and toss
