Easy 15 Minute Ground Beef Guacamole Bowl For Clean Eating

I love quick and easy whole food nutritious bowls like this one. If you’re anything like me, you like to just throw together some of your favorite ingredients and call it a meal. ūüėČ This 8 ingredient Ground Beef Guacamole Bowl has a Mexican feel with an American twist, because I’m American and cannot begin to compare to the traditional Mexican dishes. But, it’s still delicious, and very nutritious, so I hope you give it a try!

You can even get organic corn frozen, which can be much cheaper! On that note, choosing organic and grass-fed ground beef is extremely important as well, even more important than the corn.

The Environmental Working Group listed avocados as the #1 clean food in 2019. It’ll save you some money!



HEALTH BENEFITS OF THIS RECIPE

Spring Mix¬†is great for recipes like this because it doesn’t have a strong or overpowering flavor, and it’s actually quite high in vitamins A and K, and essential minerals such as potassium, and magnesium.

Organic Corn is a great fiber food and is good source of carotenoid antioxidants, especially lutein and zeaxanthin which does wonders for eye health.

Grape Tomatoes contain an antioxidant called lycopene which can actually protect the skin against sun damage.

Grass-Fed Ground Beef is a wonderful source of healthy protein, zinc, and actually has some detox properties due to the amino acid profile.

  • 2 large handfuls spring mix could substitute iceberg or romaine
  • 1/3 cup organic corn 53 grams
  • 10 grape tomatoes, halved 54 grams
  • 1 ripe avocado, mashed
  • 2 tbsp red onion, finely diced 10 grams
  • 1/4 cup cilantro, finely chopped 5 grams
  • 1/2 lime, juiced
Ground Beef
  • 1 tbsp avocado oil
  • 4 ounces grass-fed ground beef 113 grams
  • 1/8 tsp each of garlic powder, onion powder, ground cumin, paprika, red chili flakes, black pepper, sea salt
  • 1/4 tsp chili powder

The Bowl

Ground Beef
  • 1 tbsp avocado oil

Instructions
  1. Start by adding the avocado oil into a small skillet on medium heat. Add in the ground beef and spices and cook until your desired doneness or until the beef is browned.
  2. Slice the avocado in half, remove the pit and the skin, and mash the green flesh until a guacamole consistency.
  3. In a large bowl, add in the spring mix, corn, tomatoes, red onion, mashed avocado, and cilantro. Squeeze the lime juice over the top and enjoy!
Recipe Notes

To keep this recipe as pure as it gets, invest in some high quality grass-fed ground beef, and organic ingredients. Remember, avocados are safe to purchase non-organic.
