Quick, easy, and healthy pineapple salsa for eating with your favorite chips, and topping things like fish, chicken, and tacos. Loaded with vitamin C and bright refreshing flavors. Great for meal prep.
ALL ABOUT THIS PINEAPPLE SALSA:
In addition to its bright and refreshing flavors, I also love this salsa because it is:
- Quick: Chop everything up and it’s ready in just a few minutes.
- Easy: Nothing complicated here! Simple, easy ingredients. All you need is a good knife and a cutting board.
- Healthy: This salsa/salad is LOADED with vitamin C from the pineapple and bell peppers. Incredibly light and healthy!
- Meal-Prep Friendly: Great for food prep!! Will keep for up to 3 days in an airtight container like these reusable glass containers.
WHAT YOU WILL YOU NEED:
- Fresh Pineapple: Pineapple is ripe when it’s a little less green and the very top inside leaves remove easily. It should smell fragrant.
- Bell Peppers: I used red and green bell peppers. If you want to use orange or yellow, go ahead! Did you know that one serving of sweet bell pepper contains more vitamin C than an orange? Yep!
- Red Onion: Red onion is sweet and a great source of quercetin!
- Cilantro: Love fresh cilantro! If you don’t like cilantro you could try fresh parsley or even mint. Or just leave it out.
- Lime Juice: Citrus juice brightens up the flavors.
- Raw Honey: A teaspoon of organic raw honey is optional here.
- Pinch of sea salt
WHAT TO EAT THIS WITH?
This pineapple salsa pairs great with my Teriyaki Salmon Bowls with Pineapple Avocado Salsa recipe, but here are some more ideas:
- Scoop it up with your favorite chips. I like the Siete grain-free tortilla chips.
- Eat it by itself like a salad
- Top over fish like salmon, or grilled chicken.
- Add to your favorite burger
- Taco Tuesday, anyone? Goes great over tacos!
