In addition to its comfort food qualities, I also love this potato recipe because it is:
- Easy: Only a few simple ingredients that you probably already have, and it’s very easy to make!
- Healthier: If you opt for healthier versions of ingredients, for example, raw grass-fed cheddar cheese, organic sour cream, and high-quality bacon, this recipe is great for clean eating.
- Versatile: You could always add more of your favorite toppings! Guacamole would even be great!
- Enjoyed by everyone! It’s a delicious side that everyone will love. You could even create a baked potato bar and let everyone choose their toppings.
WHAT YOU WILL YOU NEED:
- Potatoes: I like to use organic russet potatoes. I don’t bother peeling them in this recipe.
- Avocado Oil: This is my favorite high-heat cooking oil for clean eating. It’s a healthy substitute for vegetable and canola oils. You could use pasture-raised melted butter or ghee instead if desired!
- Bacon: My go-to organic bacon. It’s high-quality, humane, delicious, and I feel good about eating it.
- Cheddar Cheese: Extra cheese, please?! I love this grass-fed organic raw cheddar cheese.
- Sour Cream: This is a must for this recipe in my opinion! Here’s a great quality organic sour cream.
- Toppings: I like to top my potato rounds with cherry tomatoes, jalapeños, and fresh chopped chives. It’s so good! Feel free to add any other toppings.

Description
Loaded Baked Potato Bites. Need I say more? Potatoes topped with cheddar cheese, sour cream, crispy bacon, fresh chives, and cherry tomatoes. This delicious comfort food is the perfect side dish to go with dinner on any night.
Ingredients
- 1 pound russet potatoes, sliced 1/2 inch thick
- 1–2 tablespoons avocado oil
- Sea salt and black pepper
- 4 slices cooked bacon, chopped
- 4 ounces raw cheddar cheese, shredded (about 2 cups)
- 1/2 cup sour cream
- Cherry tomatoes, quartered
- Fresh sliced jalapeños, optional
- Fresh chopped chives, for topping
Instructions
- Preheat oven to 400°F. Line sheet pan(s) with parchment paper.
- Arrange the sliced potatoes in a single layer on the sheet pan(s), then drizzle with avocado oil and sprinkle generously with sea salt and black pepper.
- Bake potatoes for 30 minutes or until the potatoes are soft, flipping once halfway through. Baking times may vary depending on the size of the potato rounds.
- Top potato rounds with the cheese, then place back into the oven for an additional 3-4 minutes or until the cheese is melted and bubbling.
- Remove from the oven and top each potato round with a bit of sour cream, bacon, fresh chives, cherry tomatoes, and jalapeños if using. Top with anything else your heart desires!
