This Creamy Herb Tomato and Cucumber Salad is super refreshing and INCREDIBLY GOOD. Quick and easy with a homemade yogurt dressing and fresh chopped chives and dill. Pair this delicious side salad with summer barbecue, burgers, grilled salmon, you name it.
ALL ABOUT THIS SALAD:
In addition to its refreshing deliciousness, I also LOVE this salad because it is:
- Easy: Only a few simple ingredients that you probably already have, and takes just a few minutes to make!
- Healthy: Fresh cucumbers, tomatoes, red onion, herbs, and homemade dressing (without all the junk) makes this recipe great for clean eating.
- Versatile: You could always add in more vegetables such as bell pepper, and you could even add in some avocado. This salad can be used as a side, or even an easy lunch topped with your favorite protein.
- Meal-Prep Friendly: Because there’s no lettuce in this salad, it can be prepped in advance! It will keep for a couple of days in the fridge. I prep mine in these reusable glass containers. Make it as a side for dinner one night and bring the leftovers for lunch the next day!

WHAT YOU WILL YOU NEED + HEALTH BENEFITS
- Tomatoes: I like to use sweet cherry tomatoes in this salad. But use what you have, I’m sure it will be great either way. Tomatoes contain lycopene, an incredible antioxidant that can enhance eye health, protect skin from sun damage, boost brain function, and more!
- Cucumber: English cucumbers are the best in my opinion. The skin is thin enough to leave on for that extra nutrition, and the flavor is great. Cucumbers are high in water content, keeping us hydrated in the summer heat. They also contain antioxidants and essential minerals for overall health.
- Red Onion: Just a bit of red onion is great in this salad. You could leave it out if you’re not a fan. Onions contain sulfur compounds, which are essential for proper detoxification in our toxic world. They’re full of prebiotics to feed your healthy gut bacteria, and they’re a great source of quercetin which is a known anti-viral, anti-microbial, and anti-inflammatory.
- Greek Yogurt: I love this grass-fed whole milk greek yogurt. Yogurt is filled with natural probiotics that help to populate your healthy gut bacteria. This is helpful for digestion, brain + mental health, and immunity.
- Avocado Oil Mayo: This is my favorite mayonnaise. It contains avocado oil as an alternative to toxic vegetable and canola oils.
- Onion + Garlic Powder: These seasonings are the main flavor components to the salad dressing. I like the Simply Organic brand.
- Fresh Herbs: I used fresh dill and fresh chives. Herbs are a complete SUPERFOOD. Add as many herbs as you can to as many meals as you can. They’re loaded with protective antioxidants and minerals that encourage flourishing health. Many herbs are anti-microbial as well.
- Lemon Juice: Freshly squeezed lemon juice brightens up this salad and adds a bit of vitamin C as well!

You can add anything you like to make this salad your own! For example, sprinkle feta cheese or add in avocado, sunflower seeds, bell pepper… The options are endless. But, it is delicious just how the recipe is written.

This salad is freshest when you make it just before serving, but you can prep it ahead of time if necessary.
HOW LONG TO KEEP LEFTOVERS?
You can keep the leftovers refrigerated for up to 3 days in an airtight container like these reusable glass containers.

Description
This Creamy Herb Tomato and Cucumber Salad is super refreshing and INCREDIBLY GOOD. Quick and easy with a homemade yogurt dressing and fresh chopped chives and dill. Pair this delicious side salad with summer barbecue, burgers, grilled salmon, you name it.
Ingredients
- 1 English cucumber, thinly sliced
- 2 cups cherry tomatoes, sliced in half
- 1/2 small red onion, sliced
CREAMY HERB DRESSING
- 1/4 cup plain whole-milk Greek yogurt
- 2 tablespoons avocado oil mayonnaise (or more yogurt)
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon lemon juice
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh dill, chopped
- 1/4 teaspoon sea salt, more to taste
- Black pepper, to taste
Instructions
- Slice the cucumber into thin half-moon shapes. I don’t peel mine because English cucumbers have thin skin.
- Slice the tomatoes and red onion. Toss the ingredients together in a large bowl.
- Make the dressing. In a small bowl or measuring cup, add in the yogurt, avocado oil mayonnaise, onion powder, garlic powder, lemon juice, fresh chives, dill, and season to taste with salt and pepper. Mix well.
- Pour the dressing over the salad and toss to coat well. Enjoy immediately or place in the fridge for 20 minutes before serving.
Notes
I encourage everyone to opt for certified organic ingredients as much as possible to avoid toxic pesticides like glyphosate.
