ALL ABOUT THIS RECIPE
In addition to its fresh fruity goodness, I also LOVE this summer salad because it is:
- Easy: Only 4 simple ingredients that are readily available and easy to come by.
- Healthy: Fresh summer fruit that is hydrating and full of antioxidants!
- Versatile: This salad is great as it is, but if you have other berries you’d like to add in — go for it! It’ll be great.
- Meal-Prep Friendly: Fresh is always best, but this salad will keep for a few days in the fridge. I prep mine in these reusable glass containers.
- Enjoyed by everyone! It’s a simple salad everyone will love, even the kids!
WHAT YOU WILL YOU NEED + HEALTH BENEFITS
- Watermelon: I used a small sugar baby watermelon in this recipe. Watermelon is about 91 percent water, making it incredibly hydrating to the body. It also contains antioxidants such as lycopene which can help to reduce oxidative stress.
- Blueberries: Fresh blueberries are the best! They’re a great source of antioxidants, especially anthocyanins. Blueberries boost brain health, help to reduce inflammation, and enhance eye health as well!
- Fresh Mint Leaves: Mint leaves are very refreshing and contain compounds that can improve digestive health.
- Lime Juice: The citrusy lime flavor really brightens the salad and brings everything together. Limes are rich in immune-boosting vitamin C.
You see? Just a small salad can be so incredibly nourishing to the body. Every bite you take matters. Choose wisely. Invest in organic if possible.
TIPS FOR THIS SUMMER SALAD RECIPE:
ADD-IN IDEAS
You can add anything you like to make this salad your own! For example, add in different types of berries, or even peaches! Or, you could transition it to a more savory salad and sprinkle feta cheese or fresh mozzarella balls with a bit of olive oil, salt and pepper, and some red onion. The options are endless. But, it is delicious just how the recipe is.
HOW TO MAKE THIS AHEAD OF TIME?
This salad is freshest when you make it soon before serving, but you can prep it ahead of time if necessary.

You can keep the leftovers refrigerated for up to 3 days in an airtight container like these reusable glass containers.
