WEDNESDAY: SPAGHETTI SQUASH SLOW COOKER BOLOGNESE
This is my take on slow cooker bolognese. It’s definitely not fully traditional, but it’s incredibly tasty and healthy as well. It pairs nicely with the roasted spaghetti squash noodles. This is an easy weeknight dinner or even for a special occasion.
THURSDAY: SAVORY SWEET POTATO SHEPHERD’S PIE
When you’re craving a comforting but healthy dinner in the wintertime, this Sweet Potato Shepherd’s Pie is the perfect thing to make. Using a few simple ingredients, a cast-iron skillet, and a batch of my homemade Savory Mashed Sweet Potatoes, you’ll have dinner on the table in no time.
